The Fire

Wood pellet smoker.

Method

Take 1 and ½ lemon and squeeze its juice. Take the zest also from these lemons.

Combine olive oil, salt, pepper, and garlic. Also, put in the lemon juice and zest prepared in the previous step and the herbs mentioned in the ingredients.

Take the smoking dish and place the fish in it. Slather the fish with the mixture.

Slice all of the veggies in thin stripes and toss them together.

Put them on top of the fillet.

Take the ½ remaining lemon and slice them into more pieces. Place them atop of the fish fillets.

Put the dish in the smoker and set the temperature at 350 F. Leave it in for about 40 min.

Julien cut the basil and garnish them on top of the fish to serve.
